¼ tsp. dried oregano
2 tsp. salt
½ tsp. white pepper
½ tsp. black pepper

First, mix the herbs and spices together to create a spice blend. Then, heat a heavy skillet (seasoned cast iron is perfect) over high heat. Next, brush the salmon fillets on each side with the melted butter, then sprinkle each evenly with the rub. Drizzle one side of each piece of salmon with half of the remaining butter, then place into the hot skillet butter side down. Step 1 - First, preheat your oven to 475 degrees. Then, dice the potatoes into bite-size pieces and spread them on a sheet pan in a single, even layer. Drizzle them with olive oil and season them to taste with salt and pepper, then roast for 25 minutes. Remember to stir and turn the potatoes halfway through for even browning.

Step 2 - For the kale, start with a hot skillet with about two teaspoons of olive oil. Simply remove and discard the kale stems, then chop the leaves. Peel and mince (or grate) the garlic, then cut the lemon into quarters and remove the seeds. Add the kale to the hot pan with about half a cup of water and cook it for two to four minutes until wilted. Drain the liquid and chop the kale finely on a cutting board, then wipe out the skillet to cook the steak.

Finally, add the butter and ¼ cup of water, season it with salt and pepper, and continue stirring for another three to four minutes. Standard-size (14 oz.) can of black beans
1 28-oz. can fire-roasted tomatoes, diced
1 large onion, chopped

1 red bell pepper cut into small pieces (about half an inch)
1 c. dry lentils (split red is best)
2 tbsp. chili powder

In a large Dutch oven over medium heat, start by cooking the onion and ½ a teaspoon of salt until they start to soften. Then, add the ground beef and cook until browned for three to four minutes. Add the garlic, red bell pepper, lentils, and chili powder, then cook for another minute. Next, add the tomatoes along with two cups of water, bring to a boil, then reduce and simmer for roughly 15 minutes. Finally, add the beans and continue cooking until heated through. Fold in the cilantro and serve in bowls with your favorite toppings, which may include cheese, sour cream, or even scallions.

½ a seedless cucumber, cut into half-rounds
2 tsp. honey
2 tsp. extra virgin olive oil
1 tsp. ground cumin

¼ cup (about an ounce) feta cheese

Salt and pepper to taste.

Step 1 – While preheating your oven to 375 degrees, whisk the cumin, oregano, half the garlic, and about a quarter teaspoon each salt and pepper into a tablespoon of olive oil to create a marinade. Brush your chicken on both sides with this mixture.

Step 2 – Divide the raw peppers evenly and place them on top of each of the cutlets. Then, roll the cutlets to secure them and pin them with toothpicks or skewers soaked in water to prevent scorching.

Step 3 – Heat the other tablespoon of olive oil in a cast iron skillet over medium heat. Add the chicken with the seam facing downward and cook for about two minutes, or until beautifully browned. Flip the chicken and cook for one more minute, then move the entire skillet to the oven and roast. It’ll take about 10 minutes.

1 lb. broccolini, thick stems removed

½ red chili pepper, sliced thin

1 tsp. fresh thyme
1 tsp. lemon zest
2 cans rinsed white beans
½ c. chicken broth

Heat your oven to 425 degrees. Toss the broccolini with a tablespoon of oil and salt and pepper to taste. Roast this for 5 minutes in the preheated oven. Toss the shrimp with a tablespoon of olive oil, the red chili, the lemon zest, and salt and pepper to taste. Scatter this over the broccolini and continue to roast until the shrimp are no longer translucent and the broccolini becomes crisp on the edges. This will take roughly 10 minutes.

Finally, heat another tablespoon of oil, along with the garlic, over medium-low heat. Continue cooking just until the garlic begins to toast. Add the beans, chicken broth, and thyme, then mash about a third of the beans. Cook until heated through. Serve on a single plate with lemon garnish.
